Delicious Sweet and Sour Salmon

This delicious sweet and sour salmon is always a winner in my family. There are hardly any leftovers. The salmon is fried with batter mixed with grated parmesan cheese, and then coated with sweet, savory and sour sauce. It is irresistible even to the point where my little girl, who is not a big fan of salmon, asks for more whenever I make this dish. Ah, did I mention that she also love this salmon lemon garlic?

Another great feature of this sweet and sour salmon, it is not to hard to prepare. Very easy and quick in fact. When you get all the ingredients ready, you just need to mix the batter, toss the salmon in, make sure the salmon is coated evenly with the batter and fry them. While it is frying, you can use another pan to make the sauce. That way, when you are done frying all the salmon, all you need to do is just coat them with the sweet and savory sauce. Easy peasy, right?

Tools I used:

  • Sauté pan – Non-stick deep sauté pan for any kind of cooking needs that I really love to use. Evenly heated, easy cleaning and very durable.
  • Non-stick sauce pan – non-stick sauce pan that is easy to clean, not too heavy, and evenly heated your sauce.

Tip: To prevent fried salmon from getting soggy, coat each salmon with the sweet and sour sauce only when you are about to consume it.

Sweet and Sour Salmon
Ingredient:

Sweet & sour sauce

  • 2 cloves garlic
  • 1 small jalapeno – seeded and chopped
  • 1 medium-sized onion – diced
  • 2 tablespoons ketchup
  • 1 tablespoon tomato paste
  • ½ tablespoon sugar
  • ½ cup water
  • Salt and pepper to taste
  • 1 tablespoon olive oil
Direction:
  • In a mixing bowl, combine all-purpose flour, grated parmesan cheese, rice flour, paprika powder, salt and pepper. Mix well. Then slowly add water while stirring.
  • Heat up enough vegetable oil to fry the salmon in a pan under medium heat.
  • Once heated, coat each salmon with the batter and fry for about 4-5 minutes each or until it is golden brown. Flip the salmon if the oil doesn’t cover the salmon. Repeat until all the salmon are all fried.
  • Set aside and let the fried salmon cool off.
  • Meanwhile, in another pan, pre-heat olive oil under low-medium heat.
  • Add garlic, jalapeno, and onion. Cook for about 3 minutes or until the onion is translucent.
  • Then add tomato paste, ketchup, sugar, salt, pepper, and water. Give it a stir occasionally. Cook for about 5 minutes or until the sauce is thicken.
  • Toss in the fried salmon into the sauce and coat each salmon evenly. Turn off the heat – your sweet and sour salmon is ready.
  • Serve with fluffy steamed rice and dishes. Enjoy!
