Pork Rib Mushroom Noodle Soup

I am going to share with you one of my favorite noodle soup recipes, Pork Rib Mushroom Noodle Soup. Though it looks sophisticated enough, it is actually very easy to make. Making the broth for the soup is not that tough, you just need to pop the pork ribs onto the water, boil it for an hour or so. You can do something else while the pot is boiling, just make sure you keep an eye on it once in a while. Add a bit of salt and pepper to taste and that’s about it. All the other stuff you put inside it – you can think of it like adding topping(s).

Delicious Pork Rib Mushroom Noodle Soup

This pork rib mushroom noodle soup has a light but very flavorful broth. Every ingredient is complimenting each other perfectly. You pretty much get all your veggie, meat and carb (noodle) fix in one bowl. This pork noodle soup is one of my go-to-meal when I don’t want to spend too much time in the kitchen. My kids love it too – though I just need to reduce the amount of mushroom a bit. To be honest, they are not a big fan of blanched mushroom. Anyhow, I got a trick up my sleeves to get them eat mushroom. Anyhow, let’s get cooking, shall we?

Tip: To get a fall-off-the-bone and very tender meat, let the meat boil for a long time under low-to-medium heat – kinda like simmering. The longer the better. Pork Rib Mushroom Soup Noodle

Ingredients:

  • 1 lb or ½ kilogram of pork rib – cleaned and cut small
  • 1 pack of flat egg noodle (about 4 portions)
  • 4 eggs
  • ½ lb or 250 gram of white mushroom – sliced
  • 3 cloves garlic – minced
  • 1 medium-sized shallot – thinly sliced
  • 3 bunches of you choy (or any green leafy vegetables you like)
  • 4 cups or 1 liter water
  • 1 teaspoon olive oil
  • 2 teaspoon sesame oil
  • Salt and pepper to taste
  • Garlic vinegar chili sauce (optional)

Directions:

  • In a deep pot, add water and pork rib under low-to-medium heat. Cook it for about one hour. Scoop out the fat that is floating on top.
  • After an hour, in a smaller pan, heat the olive oil under medium heat. Once it is heated, add garlic and shallot. Cook until it is fragrant.
  • Pour it onto the pork rib soup pot and add sesame oil on top of it. Keep the pot boiling.
  • Then, make sunny side egg using the smaller pan. Set it aside. You will use it for the topping.
  • Using the pork rib soup, blanch the you choy and mushroom. Set aside. Turn off the heat.
  • Prepare the noodle according to the packet’s instruction. Then, put it on the bowl.
  • Let’s arrange the noodle soup. Pour several pork ribs and the soup to the noodle. Then, add the blanched you choy and mushroom. Top it off with a sunny side egg. Voila, the pork rib noodle soup is ready! You can add chili if you would like.
