This delicious kimchi fried brown rice with Spam do not need a lot of seasonings. In fact, you CAN leave the seasonings behind as the kimchi liquid that we are using for this recipe is already burst with flavor. Plus, Spam itself has already been packed with saltiness – though we are using the low-sodium one. However, you are more than welcome to add more salt or pepper to your liking.

The combination of spam and kimchi in this fried brown rice is wonderful. It’s like tomato sauce and spaghetti, or ketchup and mustard in hotdog, or burger with fries, you know what I mean. However, adding some eggs give more balance to the strong flavor from spam and kimchi. So, it will not taste as sour as kimchi or taste as salty as spam. Delicious Spam Kimchi Fried Brown Rice

Tip for cooking brown rice on rice cooker:

Add 2 cups of cleaned brown rice, 3 cups of water to the rice cooker, and cook it per your rice cooker’s direction. You should have a fluffy cooked brown rice.

Spam Kimchi Fried Brown Rice

Ingredient:

  • 2 cups cooked brown rice
  • 3 cloves garlic – minced
  • 1 medium-sized shallot – sliced
  • ½ can low-sodium spam
  • ½ cup kimchi – cut into small pieces
  • ¼ cup of kimchi liquid
  • 3 eggs
  • 2 tablespoons olive oil
  • Salt and pepper (optional)
  • Cucumber and lettuce to garnish (optional)
  • Sunny side egg (optional)

Direction:

  • Preheat olive oil in a wok under medium-heat. Once heated, add garlic and shallot. Stir-fry until it is fragrant or a bit brownish.
  • Add spam and give it a stir for about 1 minute. Then, push them to the side of the wok.
  • Add egg onto the empty side of the wok and stir until the egg is a bit firm.
  • Then, add cooked brown rice, kimchi and kimchi’s liquid.
  • Give it a good stir until all are mixed nicely. Cook for about another 5 minutes.
  • Your kimchi fried brown rice is ready! You can enjoy it with a sunny side egg.
