Shumai Steamed Pork & Shrimp Dumpling (香港点心 – 燒賣)

Shumai (Steamed Pork & Shrimp Dumpling) is one of the popular cantonese style dishes that you can hardly miss in any Dim Sum restaurant. It is also known as siu mai or sio may (燒賣). Shumai is one of our favorites dim sum items aside from har gao (steamed shrimp dumpling) and Chinese BBQ pork bun. Out of the three, I would say shumai is the easiest to make. In a quick summary, you mix all the ingredients together, wrapped it in wonton wrapper and steam it.

Shumai is best to consume when it is just coming out of the steamer. If you wait long enough, the wonton wrapper will start to dry up. But, in our case, this is rarely happening because it is usually gone within minutes! Also, you can freeze up the shumai in the freezer for up to 2 months. So, it is a great way for your ‘emergency’ meal. Safe the shumai for your busy week where you hardly got time to prepare decent meal.

Siu Mai Steamed Pork & Shrimp Dumpling

Tip: If you do not have a steamer, you can place about two to three glass mugs in a deep pot as a base. Then, fill up some water up to about an inch below the highest part of the mug. Place a non-plastic plate to act as a steamer.

Shumai Steamed Pork & Shrimp Dumpling
Ingredients:
  • 1 lb ground pork
  • 1 lb shrimp – peeled, cleaned and roughly chopped
  • 3 cloves garlic – minced
  • 5 white mushroom – roughly chopped
  • 2 stalk scallion – thinly sliced
  • 2 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • ½ cup tapioca starch
  • 1 egg
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 pack dumpling wrapper
  • Water to steam
Directions:
  • In a bowl, mix all the ingredients, except for water and dumpling wrapper. Mix thoroughly.
  • Let’s taste the mix: Take about a spoonful of the mix, put it in a bowl and microwave it for about 3-5 minutes until it is cooked. Add more soy sauce if you want it to be saltier.
  • Place about a spoonful of the mix in the center of a dumpling wrapper. Then, wrap the mix around and leave the top open as seen in the picture. Repeat until all the mix is gone.
  • Heat up water in the steamer. Steam over high heat with a lid on for about 12-15 minutes.
  • Remove from heat and serve with either ketchup, sriracha or your favorite condiments!
