Personal Shrimp & Tomato Basil Pesto Tortilla Pizza

Have you ever craved for a pizza, but you dislike the idea of all the calories that come with it? Me… plenty of times! But I’m glad to discover that you can make a pizza without the loaded calories. The answer is Tortilla pizza! If you want to cut the calories even further, try making it with the low-carb version of the tortilla. I like making it with basil pesto sauce.

This shrimp and tomato basil pesto tortilla pizza is my go-to if I crave for pizza. First, I can just make one for myself, so it’s like a personal pizza (get the size for soft taco tortilla). Second, the combination of shrimp, tomato and basil pesto is so perfect that you might want to prepare two! It will be gone fast before you know it. Crispy, savory, Last but not least, this basil pesto tortilla pizza can be prepared in less than 30 minutes. How cool is that? Let’s get cooking, shall we?

Tip: I am using low-carb flour tortilla in the recipe below. However, you can pretty much use any kind of tortilla (whole wheat, flour tortilla, corn tortilla, and so on). There won’t be much difference in the taste as the basil pesto and mozzarella cheese taste will empower it (well, unless you really have a super delicate palate!)

  • Preheat oven to 300F.
  • Let’s assemble the tortilla pizza. Place the tortilla on top of aluminum foil or baking sheet. If you are using baking sheet, brush or spray the baking sheet with olive oil so that the tortilla will not stick after baking.
  • Spread basil pesto evenly across the tortilla, leaving about ½ inch around the edges.
  • Sprinkle the mozzarella evenly across. Place the tomato, baby spinach leave, shrimp equally across the tortilla.
  • Bake the tortilla pizza around 10 – 15 minutes or until the cheese is bubbly.
  • Remove from oven, and sprinkle with parmesan cheese prior to serving. Enjoy!
