During this covid-19 lockdown, I need to get more creative in cooking for my family as, for some reason, they are asking for more snacks. Do you feel the same with your family? So, I think about this as a stay-at-home challenge, to experiment in the kitchen more (and sometimes involving my kids so they won’t get bored) and create some delicious and tasty snack, appetizer, or meal. What’s more, these cajun parmesan chicken wings are super-duper easy to prepare. Perfect for your busy weeknights or movie nights. First, you need to gather all the ingredients needed. Then, combine most of the ingredients (all-purpose flour, rice flour, salt, pepper, paprika powder, and turmeric powder), coat each wing with the mixture, and let it marinate for at least two hours. Fry until golden brown, take out, sprinkle them with cajun-seasoning and grated parmesan, toss them to evenly coat and serve! Easy peasy, right?

Tools I used:

  • Deep fryer – It is quite handy to have deep fryer at home if you love to make AND EAT crunchy food. I can just leave the frying oil in the deep fryer for next time and re-use the oil after several use – and avoid cleaning oily tools too often.

Tip: Let the chicken marinate for at least 2 hours before frying. Also, when frying, ensure that you do not overcrowd the pan or deep fryer. This is to make sure that the chicken wings are evenly fried.

  • In a mixing bowl, combine all-purpose flour, rice flour, salt, pepper, paprika, and turmeric. Mix well.
  • Then, add chicken wings to the mixing bowl. Coat all the chicken wings thoroughly. Then, set aside and let it marinate in the refrigerator for, at least, 2 hours. You can leave it overnight as well.
  • Heat the vegetable oil in the frying pan or deep fryer under medium-high heat.
  • Once heated, place each chicken wings in the frying pan or deep fryer. Do not put too many wings in the pan or deep fryer (do not overcrowd) to ensure that you evenly cooked the chicken.
  • Fry each wing for about 10-15 minutes (depending on how big each wing is) or until it is golden brown.
  • Take out and put the wings in a bowl. Sprinkle with cajun seasoning and grated parmesan cheese. Toss the wings around to make sure that it is all coated well with the Cajun seasoning and parmesan cheese.
  • Set aside and let it cool down for about 3 minutes.
  • Serve with ketchup or your favorite condiment. Enjoy!
