Babi Kecap Jahe dan Kentang (Sweet and Savory Pork with Ginger and Potato)

The other day, I only had two potatoes leftover and I am not sure what to do with it. I would need more potatoes to make french fries, potato skins, potato fritters or croquettes. However, I am not in the mood of going to the grocery store, just to get potatoes. I usually just make food with whatever in the kitchen before the next grocery trip. So, I decided to put on my creative hat and experimented with a new recipe in the kitchen. Voila, I created this Babi Kecap Jahe dan Kentang (Sweet and Savory Pork with ginger and potato) recipe. It is now becoming one of my husband’s favorite dishes. Glad I have this blog so that I can write up the recipe and can come back to it if needed.

Babi Kecap Jahe dan Kentang (Sweet and Savory Pork with Ginger and Potato)

I find that in this recipe, Sweet and Savory Pork with Ginger and Potato, the spice in the ginger is not too overwhelming as it is balanced out by the soy sauce and the sweet soy sauce. The potato added a nice texture and hearty flavor to the overall dish. It is also very easy and quick to put together. So, if you are having a busy day, please give this recipe a try.

Sweet and Savory Pork with Ginger and Potato

Ingredient:

  • 1 lb pork loin – cut into match-stick shape
  • 1 medium russet potato – cut into match-stick shape
  • 2 cloves garlic – minced
  • 1 medium-sized shallot – sliced
  • 1 inch ginger – julienned
  • 2 tablespoons olive oil
  • 1 tablespoon oyster sauce
  • 3 tablespoons sweet soy sauce (can be substituted with dark brown sugar)
  • 1 tablespoon soy sauce
  • Chopped cilantro or parsley to garnish (optional)

Direction:

  • Heat oil in a skillet under medium heat. Once heated, add garlic, shallot and ginger. Stir until it is fragrant or a bit brownish.
  • Add potato and cook it until it is half-done, about 3 minutes.
  • Add pork, oyster sauce, sweet soy sauce and soy sauce. Stir it well and cook for about 10 minutes or until the potato is soft and the pork is cooked thoroughly.
  • Garnish with chopped cilantro and serve it while it’s hot over steamed rice!
