Beef Broccoli Pad See Ew (Thai Fried Rice Noodle with Beef and Broccoli)

Happy New Year everyone! Glad to be able to start the first 2018 blog post with this recipe, Beef Broccoli Pad See Ew or known as Thai Fried Rice Noodle with Beef and Broccoli. It is one of the popular dishes, besides Pad thai (you can check out my pad thai version), that you can find practically in almost all Thai restaurants in the United States. It is also a very well known yummy Thai street food in Thailand.

Beef Broccoli Pad See Ew (Thai Fried Rice Noodle with Beef and Broccoli)

Pad See Ew is a soft, chewy, and savory rice noodle recipe with charred flavor that is one of my family’s favorite comfort food. Pad See Ew’s taste is very similar to Chinese Indonesian’s flat rice noodle dish (Kwetiau Goreng). Personally for me, the winning factor in the recipe is the charred flavor – slightly burned, but not bitter. It is actually quite easy to make, but you have to make sure to have all the ingredients prepare beforehand so you won’t have to scramble around and burn the noodle. See note.

Pad See Ew Beef and Broccoli

Note: It is quite important to have all the ingredients prepared beforehand because, for best result, you need to cook it on a hot pan or wok to have the charred taste. If you cannot stir the rice noodle quick enough, the ‘secret’ technique I learned from my family is that ‘marinate’ the rice noodle beforehand as seen the recipe below.

Thai Fried Rice Noodle with Beef and Broccoli

Ingredients:

  • 1 lb of fresh flat rice noodle (or 450 g of dried flat rice noodle)
  • 2 tablespoons dark soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • ¼ lb or 1 cup of beef – cut into bite size
  • 2 eggs
  • 1 medium stem or 2 cups of broccoli – cut into bite size pieces
  • 2 ounces water
  • 2 cloves of garlic – minced
  • 1 tablespoon oyster sauce
  • 3 tablespoons olive oil
  • 1 pinch of Pepper

Directions:

  • If you are using the fresh flat rice noodle, separate each strands of noodle. In a big bowl, add the noodle, soy sauce and fish sauce. Put it aside.
  • If you are using the dried flat rice noodle, prepare according to packet instruction. When it is already soft enough, drain. In a big bowl, add the noodle, soy sauce and fish sauce. Put it aside.
  • Preheat 2 tablespoons of oil in a pan or wok on high heat. Once heated, add garlic. Stir until it is fragrant or a bit brownish.
  • Add beef. Stir until it changes color.
  • Push all things inside the pan or wok to the side and add the remaining oil (1 tablespoon of oil). Add egg and quickly beat the egg with spatula. Then, quickly stir the egg with the remaining ingredients so that it mixes well with the others.
  • Add broccoli and water. Keep stirring.
  • When the broccoli is soft enough, add the rice noodle, oyster sauce, sugar and a pinch of pepper. Give a stir until there are bit pieces of charred noodle. About 3 to 5 minutes depending on how hot the heat is.
  • Serve and enjoy while it’s hot!
